“New Chef at Tarallucci e Vino”
Tarallucci e Vino, Union Square’s authentic Italian caffè, has appointed a new chef— Riccardo Bilotta. Originally from Trieste, Italy, Bilotta has cooked in a number of celebrated European kitchens, including the five-star Regina Baglioni Hotel in Rome and Il Pellicano Hotel in Tuscany. In Madrid, he worked at La Broche, a two-star Michelin ranked restaurant, and Zaranda, which has one Michelin star. Bilotta further honed his culinary techniques in the Catalan region of Girona at the renowned El Celler de Can Roca, before moving to New York.
At Tarallucci e Vino, he is debuting a new fall menu that includes squid filled with capers, olives and tomato, zucchini and sea bean ragout in a squid ink sauce ($12), sage fritters filled with mozzarella and anchovies ($12), saffron “spaghettoni alla chitarra” with chanterelles, clams, and tuna bottarga, roasted poussin with wine glazed artichokes, tomatoes in herb crust ($24), and rib eye “tagliata”, truffle and mushroom herb salad ($28).
