“Dessert Pyscho at Del Posto”
Del Posto has announced a new pastry chef. The man replacing the (irreplaceable) Nicole Kaplan is Brooks Headley, a self-described “dessert psycho” who has been at the pastry chef at Komi in Washington DC since March 2006. His menu features Chocolate Ricotta Tortino with Toasted Sicilian Pistachios and Extra Virgin Olive Oil Gelato, Crespelle di Polenta with Frozen Ricotta, Rhubarb and Rose Hip Jam, and Crostata di Limone with Huckleberry Marmellata & Creme Fraiche. He doesn’t sound that psycho to me. Just sounds really good.
