“Gary Robins Responds”
Last week, I wrote a post on Sheridan Square’s opening, and I noted that Gary Robins was a chef who, in my estimation, moved around a lot. I response to my post, I received an email from Robbins taking issue with that characterization and with the tone of my post.
I thought I’d post his email because he does make some clarifications with respect to his tenure at different restaurants that I think are important and allow for a more complete and more fair understanding of the jumps along the way in his career. His email follows, below:
“…I must, however, take exception with your opening commentary regarding the tenure of my employments. When opening the Biltmore Room, I had not stayed in a position longer than a year, and had the misjudgment of accepting several positions I should not have. But prior to that, early in my career, I was involved with the Aja project for three and a half years, and at the Biltmore Room, I was there from late 2002, while we were conceptualizing out the space.
The RTR was an unfortunate matter, and everyone in the industry knows how many employees they have gone through. I was the first person hired in the company, and saw four General Managers, and 50% of the staff be fired prior to my departure. Even today it is revolving door for employees.”
