“Coming Soon: Apiary”
Neil Manacle is a name that may not be familiar to many of you. That’s okay. He’s not really a spotlight kind of chef. What he does very well, and has been doing for the past 16 years, is acting at Bobby Flay’s right-hand man at restaurants like Mesa Grill and Bar Americain. I first met him through chef Katy Sparks, who was also a Bobby Flay sous-chef many moons ago. Then I profiled him in a piece I wrote for Time Out New York and discovered that he's a very humble and unassuming guy, which may explain why it's taken him a while to spread his wings and fly out on his own.
After almost two decades at Flay's side, he’s finally making the move into the spotlight and opening a place of his own. In mid-July he will open Apiary with Jenny Moon (opening Maitre d' at Eighty One and former executive assistant to chef Daniel Boulud) and Ligne Roset Long Island/New Jersey, the French modern furniture company that will also be responsible for the design of the space.
The 70-seat restaurant will offer a seasonal American menu (simple clean flavors), and a beverage program designed by Nick Matone, formerly of Gramercy Tavern. Stay tuned.
